This is a starter of unknown origins.  I’m told it dates back to the Civil War era but haven’t been able to verify that fact.  I’ve been keeping it alive with King Arthur unbleached flour.  This starter originates as a much heavier version of a starter – almost like a fully proofed bread dough itself.   

FEEDING INSTRUCTIONS:

Mix 15g starter flakes w/30g non-chlorinated water.  Let sit for one hour, stirring once every 15 minutes. After the hour is up, add 15g flour and an additional 15g of non-chlorinated water. Let sit 12 hours, then add 50g each flour and non-chlorinated water. repeat the 50g flour and water once per day.  You should start to see your starter come alive and bubbly within 2-3 days (depending on your room temperature).
