This is the one that started it all! This 100% rye flour Irish sourdough starter (I've nicknamed her "Colleen") hails from the Galway and Sligo regions of Ireland and has been in my family for many generations. I don’t have the full lineage of surnames, but I’m told this starter has been handed down from mother to daughter from at least the mid 18oo’s. So far, I’ve been able to trace it back through the Brennan, Coyne, and Delehanty Irish lineages. The starter first came to America in 1898 when my great-grandmother Julia (nee Coyne) Delehanty arrived in New York from Ireland. Her (my) family went on to settle in the South End of Boston, Massachusetts, and Pittsburgh, PA as migrant workers.

FEEDING INSTRUCTIONS:

Mix 15g starter flakes w/30g non-chlorinated water.  Let sit for one hour, stirring once every 15 minutes. After the hour is up, add 15g flour and an additional 15g of non-chlorinated water. Let sit 12 hours, then add 50g each flour and non-chlorinated water. repeat the 50g flour and water once per day.  You should start to see your starter come alive and bubbly within 2-3 days (depending on your room temperature).

I just wanted to say thanks and share my excitement lol. I ordered 2 colleen starters a few weeks back and I’ve struggled for literal months trying to get a starter going and this dehydrated started worked!
